A cane press, painted rollers and stalks at the ready

Cairo · All over Cairo

The sugarcane juice stalls

Cane pressed in front of you, for the price of a coin.

Budget

Cane presses are everywhere: three passes through the rollers, and the glass arrives green and foaming. It is Egypt's cheapest drink, served standing at the counter, and one of the few pleasures the city has never made expensive.

The extra bit

Drink it straight away: cane juice oxidises in minutes and loses its taste.

Know before you go

Choose a counter where the press never stops: that is the guarantee of freshness and hygiene.
