The Egyptian sandwich is a dish in itself: taameya fried to order, foul dressed with oil, chips, aubergine, salad and tahini, all in half a loaf. It is breakfast and lunch for most of the country, and it is almost always vegan.

The extra bit

Ask for taameya "sokhna" — hot from the fryer: that is the whole difference.
