Koshari, foul, taameya, meatless molokheya, salads, vegetable tagines: everyday Egyptian food is almost entirely plant-based, for economic as much as religious reasons — the Coptic fast lasts weeks each year and imposes cooking without animal products.

The extra bit

Ask for "siyami" — fasting food: the word means, everywhere, a dish with no animal products.

Know before you go

Watch the stock: molokheya and rice are often built on chicken broth. "Siyami" removes the ambiguity.
