Baladi fiteer is dough stretched, folded and buttered a dozen times, then baked in a wood oven: filled with roumi cheese and meat, or served plain with honey and cream. Every district has its fatatri, and it is a dish to share.

Order it "nos w nos" — half savoury, half sweet: that is how families take it.
