Alexandria's hawawshi

Baladi bread stuffed with spiced minced meat, oven-baked until crisp.

Hawawshi is an oven dish: minced meat, onion, chilli and spices sealed in bread, then put to fierce heat. Alexandria makes it fattier and spicier than Cairo, and often serves it with tahini and pickles.

The extra bit

Eat it straight from the oven: reheated, the bread loses everything that makes the dish.
